BAKED BANANA BREAD DONUTS WITH CHOCOLATE GANACHE GLAZE AND BRÛLÉE BANANAS

Growing up Banana bread was ALWAYS a staple in our house! When I say  staple I mean I was never surprised when I opened up my lunch box to find my mom packed me banana bread... AGAIN. Now nothing against Banana Bread because I am quite convinced my mom makes THE BEST banana bread in the world... but sometimes you just need a little switch up am I right?

Now I know, we ALL get those bananas piling up that are too far gone and need to be used SOMEHOW. So I thought why not throw a curve ball at your regular banana bread recipe and give these bad boys a try. So here it is! Baked Banana Bread Donuts! Even without the Chocolate Ganache Glaze and Brûlée Bananas, this recipe is STILL fantastic! Not to mention, eating a donut is ALWAYS more fun!  Enjoy!

INGREDIENTS

Prep Time: 20 minutes

Cook Time: 12-15 minutes

Total Time: 1 hour

makes 12-15 donuts

1 cup sugar

4 tbs butter (at room temperature)

1 egg

3 over ripe bananas (the browner the better)

1 1/2 cup flour

1 tsp baking soda

1/2 tsp salt

 

Chocolate Ganache Glaze

1 cup bittersweet chocolate

1 cup heavy cream

 

Brûlée Bananas

1/2 ripe banana thinly sliced

1 cup sugar

Blow torch

PREPARATION

1. Preheat oven to 350 .

2.In a medium bowl cream sugar and butter till light and fluffy. Add egg and bananas. Note* the mixture may look a bit split with the bananas and the egg but once you add the dry ingredients it will come together.*

3. In a separate bowl combine flour, baking soda and salt. 

4. Combine the banana mixture with the dry ingredients. 

5. Lightly coat nonstick donut pan with baking spray. Pour mixture into a piping bag or a large ziplock bag (Ziplock bags work great as a "Makeshift" piping bag by simply cutting the corner) and cut a small opening in the bottom. Pipe the mixture into the donut pan until just over half full. 

6. Bake for 12-15 minutes till golden brown and a toothpick pulls out clean when inserted into the donut. Remove from the oven and allow to cool.

Chocolate Ganache

1. Once donuts have cooled, warm cream in a small saucepan till steaming. Pour hot cream over chocolate and mix till smooth. 

2. Allow the ganache to cool slightly (should be the consistency of white school glue). When the ganache has reached this texture, take the cooled donuts and gently dip in the ganache. Place on a rack to cool.

Brûlée Bananas

1. Spread the sliced bananas on a small baking sheet. Generously sprinkle the bananas with sugar. 

2. Using a small blow torch, burn the sugar on top of the bananas till  it turns a rich caramel color. Note* its best to do this just before serving to avoid the sliced bananas from browning.

3. Place the brûlée bananas on the donuts and enjoy!
