THE BEST BLUEBERRY PANCAKES
In honour of the 2018 Calgary Stampede starting tomorrow I thought what better way to kick off the party then with my all time FAVOURITE pancake recipe. Now for those of you unfamiliar with the Stampede, it is the annual rodeo that is hosted every July in Calgary! It's not just any rodeo, this event literally turns the city upside down! With more than 1 million visitors attending the grounds every year, hundreds of FREE pancake breakfasts throughout the city and numerous country artists and two stepping opportunities it's basically a 10 day party! Now back to the pancakes... I have been using this recipe for years and it has yet to disappoint! These guys are fluffy, delicious and SO GOOD with fresh blueberries! Of course, they aren't the "Healthiest" of pancakes but by all means, toss in some flax or chia seeds if that will calm your spirits! Hope you guys LOVE them as much as I do!
PREP TIME: 10 MINUTES
COOK TIME: 15 MINUTES total
TOTAL TIME: 30
MAKES 10 small or 4 large pancakes
1 cup Flour
2 tsp baking powder
1/2 tsp salt
2 tbs sugar
1 large egg
1 cup milk
2 tbs butter melted
1 1/2 cups fresh blueberries
1. Heat griddle to 375℉ or non-stick frying pan over medium heat. Whisk together flour, baking powder, salt and sugar. Next, add lightly beaten egg, milk and melted butter; whisk to combine. Note* The batter should have small lumps so don't over mix.
2. Lightly oil griddle with butter and vegetable oil; be sure to remove any excess using a paper towel. Once griddle has reached the desired temperature, use a small ladle or a 1/4 cup measurement to spoon the batter onto the griddle in the desired size (approximately 2 inches apart). Sprinkle the pancakes with blueberries and flip once the pancakes have started to bubble throughout (approximately 2 minutes). Continue cooking until the bottom of the pancakes are golden.
3. Repeat with the remaining batter.
4. Serve pancakes with butter and maple syrup and ENJOY!
