GRAPEFRUIT MINT GIN & TONIC POPS
Friends, I’ll be the first to admit, I’m no bartender. When happy hour rolls around, I’m quick to pull out the ole bottle of gin and whip up my go-to cocktail... you guessed it. Gin and tonic! There’s just something about the herbatious “pine tree” nature of gin with that sweet and citrus tonic that offers perfect refreshment with just the right amount of sweet! Toss in a squeeze of lime, a few leaves of mint and a juicy wedge of grapefruit and trust me when I say, happy hour will never look happier.
All that to say, what cocktail doesn’t get better in frozen form? These boozy adult pops are perfect on their own or great in your favorite gin cocktail (for added ice and booze of course!). Just be careful not to heavy pour on the gin (as tempting as it may be) otherwise these bad boys won’t freeze! Enjoy!
PREP TIME: 15 MINUTES
COOK TIME: 10-15 MINUTES
TOTAL TIME: 30 MINUTES
MAKES 4-5 POPSICLES
1 330ML CAN OF TONIC WATER
2 OZ GIN
1/4 CUP FRESH MINT
JUICE OF 1 LIME
1. In a medium sized bowl with a pour spout, mix the tonic water, gin and lime juice.
2. Thinly slice grapefruit into segments. Place one grapefruit segment and a few pieces of mint in each popsicle mold. Pour the tonic mixture into the mold to the top and place in the freezer for 1-2 hours (until the mixture starts to freeze, then insert the popsicle sticks). Let freeze overnight. Serve as is or in your favorite gin cocktail!
